What's Cooking? Dunkin' Cookies and Strawberry Milkshakes

Nasreen Karim is a mom to two young children, and a Pharmacist by profession. She grew up in Vancouver, and lived with her grandparents, which is where her love of food stems from. She decided to start a food blog on Instagram a year ago to share her passion for cooking. In Nasreen’s words, “I believe anyone can cook, you just have to try!”

Some of her favourite foods are muthiya and biryani. She loves to try new things, especially in the kitchen, and really enjoys making recipes with her older son. Nasreen could eat dessert all day long, and firmly believes butter and whipping cream make everything better!

Dunking cookies - perfectly dunkable in milk, coffee or chai. Get the family involved in baking and add in some fun variations that everyone will love
Base recipe Ingredients:⁣
  • 1 cup salted butter room temperature
  • 1 cup granulated sugar ⁣
  • 2 tsp baking powder ⁣
  • 3/4 cup fine ground semolina (sooji)⁣
  • 2 and 1/4 cups all purpose flour ⁣
  • 1 tsp vanilla
  • 2 eggs⁣
 
Ingredients for variations: (Split dough into 5-6 parts and add in as per below)
 
Tri Colour Swirls
  • 1/2 tbs cocoa powder⁣ mixed into one part dough
  • 6 drops red food color mixed into one part dough⁣
**divide base dough into three parts. Add cocoa powder to one and mix well. Add food color to one and mix well. Make three small balls with each colour and roll together in palms gently.
 
Coconut Thumbprints
  • 1TBS unsweetened shredded coconut add to one part dough and mix
  • 1-2 TBS unsweetened shredded coconut to roll dough balls in
  • 2 tsp jam or nutella for topping (about 1/4 tsp per cookie)
**add 1 TBS coconut to dough and mix well. Roll each ball of dough into more coconut and place on baking tray. Using fingers, make small hole in middle and put 1/4 tsp jam or nutella in the hole.
 
Cardamom
  • 1/4-1/8 tsp ground elchi (cardamom) add to dough and mix
  • 1-2 TBS of chopped nuts for topping (almonds and pistachios)
**Add ground cardamom to dough and mix well. Roll small dough balls and dip into chopped nuts before baking
 
Funfetti
  • 2 tsp rainbow sprinkles add to dough and mix
  • 1 tbs sprinkles for topping
**Add 2 tsp sprinkles to dough and mix well. Roll small dough balls and press into sprinkles before baking
 
Cookie sandwiches
  • 1 cup softened ice cream or kulfi of choice
**using two cookies of choice, place a scoop of ice cream or kulfi in between to create a cookie sandwich.Freeze for storage.
 
Procedure:⁣
Preheat oven to 325 deg and line baking trays with parchment paper. (This recipe makes about 36 cookies) Cream butter and sugar together for a few mins until lighter in colour and fluffy with an electric mixer. Add flour, baking powder and semolina and continue to mix until combined. Add eggs and vanilla and mix until soft dough formed. If dough is too soft, add flour one TBS at a time. Dough should be soft but not stick to your hands. Divide dough into equal parts and add in ingredients for variations as listed above. Make small balls of each kind of dough (about 1 - 1.5 tbs of dough), dip in any toppings and place on tray to bake about 2 inches apart. Bake for 17-20 mins until edges lightly brown. Bake longer for crunchier cookies, or on the low end for softer ones. Allow to cool completely before storing in airtight container.

Fresh Strawberry Vanilla Milkshake - The perfect refreshing drink the whole family will love!
 
Ingredients: (makes 3 servings)
  • 2 cups fresh strawberries cut
  • 2-3 cups vanilla ice cream (You can use strawberry as well)
  • 1/2 cup heavy cream
  • Optional toppings - whipped cream, sprinkles, more strawberries
 
Procedure:
Add all ingredients for milkshake into a blender and blend on high speed for about 1 minute until smooth. Pour into glasses and top with whipping cream, sprinkles and more strawberries. Best if consumed immediately!
